Biology professor Chester Wilson has been composting coffee grounds since the late 1990s.

This year, members of the Green Team are working to grow Wilson’s composting project with help from a campus sustainability fund.

Senior team member Quinn Wrenholt said he believes composting will help the students at St. Thomas understand the connection between food waste and how it affects the earth.

“Composting is a huge way to connect people with their food,” Wrenholt said. “It’s really easy to think that food comes from a grocery store, and then it goes into the garbage and, you know, that’s all you think about. But there’s a heck of a lot more to it than that.”

The nutritious soil created from the compost is used to re-pot plants around campus as well as to help neighboring community gardens flourish.
